Remove the seeds and place on a 9&#215;12 baking sheet. Brush squash with 2 tablespoons of olive oil and bake in a 375 degree oven for 35-40 minutes.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<p>Combine brown sugar, Garam Masala, curry powder and cinnamon. Place butternut squash peeled and cubed in a baking dish. Drizzle 1\/4 cup of the olive oil over the top. Add the brown sugar combination and toss all together. Place in the oven and bake 35-40 minutes until fork tender.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Cook the Couscous<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p>While the squashes are baking, prepare the Lundberg couscous. In a medium saucepan add te 1 cup of water and bring to a boil. Add the couscous, turn the heat to low and cook, covered for 12-15 minutes. Remove from heat, keep covered, and let sit for 5 minutes. Fluff with a fork and add 1\/4 tsp of salt.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Assemble the Plate<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>Remove both squashes from oven. Add the apple, couscous and dried cranberries to the baked butternut squash and mix together. To serve, place acorn squash rings on a platter. Spoon butternut squash mixture into the middle of each ring.
